Libby's Pumpkin Bread
Serves: 2 loaves
  • 2 cups canned pumpkin
  • 3½ cups all-purpose flour
  • ¼ tsp. baking powder
  • 2 tsp. baking soda
  • 1½ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. cloves
  • 1½ cup each granulated sugar and packed brown sugar
  • 1 cup oil
  • 4 eggs
  1. Sift dry ingredients together.
  2. Mix dry ingredients with the oil and pumpkin, stirring until well combined.
  3. Add eggs, one at a time, blending thoroughly.
  4. Bake in well greased loaf pans for 50 to 60 minutes in 350 degree oven.
