Ingredients:
3 large potatoes, boiled
4 cups cabbage, chopped, parboiled and drained
1 small onion, chopped
4 slices bacon, cut up and fried
25g (1oz) butter
Preparation:
- Chop cooked potatoes.
- Melt the butter, then add onion and sauté until golden brown. Add chopped, cooked cabbage and chopped, cooked potatoes.
- Heat a frying pan until hot and add the bacon and fry until crisp. Add the bacon to the potato mix.
- Allow potatoes to become golden brown on bottom over medium heat, about 20 minutes or less. Invert skillet over large serving plate. Garnish with parsley, if desired.
I was looking for a recipe that I could make using some cut up bacon I had in the freezer and I chose this thrifty meal, especially made for those of us on a budget.
