Ingredients
1cupbutter
1cupdark brown sugarI used Muscovado
1/2cupgranulated sugar
1egg
1egg yolk
1teaspoonpure vanilla extract
2cupsflour
1cupuncooked rolled oats
1/2teaspoonbaking soda
1/2teaspoonsalt
1/4teaspoonground cinnamon
1cupwhite chocolate chips
1cupchocolate chips
Instructions
Melt the butter over medium heat in a large saucepan. Remove from the heat, add both sugars and stir until smooth. Chill the mixture for about 10 minutes in the refrigerator.
Stir in egg, egg yolk and vanilla.
Add flour, rolled oats, baking soda, salt and cinnamon and mix together.
Stir in both white and dark chocolate chips.
Use a scoop to make 24 equal size portions, then roll the dough by hand into balls. Place on a cookie sheet and chill for at least 30 minutes.
Bake the cookies in preheated 325 F (160 C) oven for 12 to 14 minutes.
