Ingredients
- 3 lb (1.5 kg) chicken
- 2 qts water
- 1 1/2 cup chicken stock
- 2 cups carrots, chopped
- 2 cups celery, chopped
- 1 cup onions, chopped
- 1 tart apple, chopped
- 2 teaspoons salt
- pepper, to taste
- 4 cups egg noodles
Instructions

Put chicken in a large pot with 2 quarts water. Cover and cook about 2 1/2 hours, or until chicken is tender.

Remove chicken from the pot and strain broth.

Debone chicken and return to the pot together with strained broth.

Add chicken stock, carrots, celery, onions, apple, salt and pepper and cook until vegetables are soft.

Add noodles and cook for another 8-10 minutes. Serve hot.

why is there an apple in this soup???
I wondered the same thing when I saw the recipe for the first time. I guess they had a lot of tart apples which could be used along carrots and celery in the soup.
I’m sure that this recipe didn’t come from an Amish person. An Amish cook would never, I repeat NEVER, add chicken stock from a carton to home made chicken soup….why would you do that? When you cook a whole (cut-up) chicken with the bones & skin on it, the broth already comes out very tasty, and you don’t need to ‘stretch it’ by adding stock from a carton. More water could have been used in this recipe, as well as fresh parsley for a fragrant finish when serving.
It doesn’t say use store bought stock
It says put the chicken in 2 qts of water for 2 1/2 hours then it says remove chicken and strain broth.But it said put in [chicken] in 2 qts of water.I am so so confused.And tell me what the apple is for? Sounds odd to me
