Amish Potato Salad is a good old-fashioned deli salad which combines cooked potatoes with creamy yellow sweet and sour dressing enriched with hard boiled eggs, sour cream and mustard.

What’s different about Amish Potato Salad is that it is much sweeter than regular or German potato salad, but you can adjust the amount of sugar to your liking. It also uses vinegar and yellow mustard for sweet-and-sour flavor combination.

Amish Potato Salad recipe goes with practically anything, from picnics to barbecue to lunch to dinner!
- 1 lb potatoes; peeled boiled and cut into cubes, 1/2 kg
- 2 hard boiled eggs
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon yellow mustard
- 1/4 cup sugar*
- 1 teaspoon vinegar
- salt and ground black pepper to taste
Start making Amish Potato Salad by placing potatoes and chopped hard boiled egg whites in a large bowl.
Amish mayonnaise recipe: In a small bowl, combine mayonnaise, hard boiled eggs yolks, sour cream, mustard, sugar, vinegar, salt and pepper. Mix well. Pour over potatoes and and gently stir until thoroughly coated. Refrigerate Amish Potato Salad until cooled, at least 30 minutes, before serving.
