Ingredients
- Libby’s Pumpkin Bread Ingredients:
- 2 cups canned Libby’s pumpkin
- 3 1/2 cups all-purpose flour
- 1/4 tsp baking powder
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1 1/2 cup each granulated sugar and packed brown sugar
- 1 cup oil
- 4 eggs
Instructions

Sift dry ingredients together.

Mix dry ingredients with the oil and pumpkin, stirring until well combined.

Add eggs, one at a time, blending thoroughly.

Bake Libby’s Pumpkin Bread in well greased loaf pans for 50 to 60 minutes in 350 degree oven.

What size loaf pan does one use???
You can use 2 greased and floured 9 1/2 x 5 1/4-inch loaf pans.
I made this in Cooking class in high School. My family loved it for thanksgiving. Haven’t had it in years! I’m excited to make it again!

awesome – thanks it waS just what i was looking for – the new recipes from the libby’s site did away with the oil and reduced the eggs – i can substitute on my own…..YIPPEEE thanks.

You can still do away with the oil…just replace the oil with unsweetened applesause. In fact it will be even more moist! Just might take a bit longer to bake.
