Almond Flour Pancakes are a good low-carb, gluten-free alternative to regular pancakes. They are a bit thinner, but can still satisfy a craving for sweets. With a cup of milk or fruit juice on the side, these pancakes fill your stomach and give you energy to start your day.
The recipe calls for almond flour and oatmeal flour which you can make them in your home very easily. Almond flour can be made by grinding blanched almonds. I used my coffee grinder (spice grinder) for that purpose. Oatmeal flour can be made in the same way by grinding rolled oats. You can also use regular blender to grind oats.
It is good to flavor pancakes with vanilla and cinnamon to give them nice aroma. You can use some other spices which you like.
Serve Almond Flour Pancakes with some fresh fruit, honey, syrup or low fat cheese for a wholesome breakfast.
- 1 cup almond flour or ground blanched almonds
- 1 1/2 cup GF oatmeal flour or ground rolled oats
- 1 tsp baking powder
- 2 eggs
- 1 cup milk of choice
- 3 Tbsp sugar or sweetener of choice
- 2 tsp vanilla extract
- a pinch of cinnamon
- a pinch of salt
- 2 Tbsp oil or melted butter

Put all ingredients in blender. Blend until smooth.

Pour 1-2 Tbsp of batter on an oiled hot griddle or pan. Bake until bubbles appear. Turn and bake the other side until done.
