Banana Nut Muffins – healthy breakfast muffins, full of walnuts, banana, oats and whole wheat flour.
One can never have too many breakfast muffin recipes. Even though they are tasty like a dessert, they are also full of healthy ingredients like oats, whole wheat flour, walnuts and banana.
The other thing I like about them is that you can prepare them once and then you have your breakfast ready for next several days.

I always eat them fresh, but they can also be frozen in advance and just reheated when you need them.
Banana Nut Muffins are great with a glass of orange juice, milk, cocoa or a cup of coffee. If you want them even richer, you can cut them in half, spread a little nut butter or nutella and top with a few slices of fresh banana.

Banana Nut Muffins – healthy breakfast muffins, full of walnuts, banana, oats and whole wheat flour.
- 1 1/2 cups whole wheat flour
- 1 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 large egg
- 1 cup applesauce, unsweetened
- 1/2 cup milk, low fat or non-fat
- 1/4 cup sunflower or vegetable oil
- 1/2 cup banana puree (about 2 bananas mashed with a fork)
- 1/2 cup brown sugar, firmly packed
- 2/3 cup walnuts, toasted and chopped

Combine whole wheat flour, rolled oats, baking powder, baking soda and cinnamon.

In another bowl, whisk together egg, applesauce, milk, oil, banana puree and brown sugar.

Add the flour mixture, stirring until just moistened (do not over-mix). Add chopped walnuts and stir.

Divide the batter between 12 muffin cups. (Optional: sprinkle muffins tops with some chopped walnuts.)

Bake at 400 F (200 C) for about 20 minutes or until a toothpick inserted in the middle of one of the muffins comes out clean.

Hi, in your description of the muffins you mention whole wheat flour but in the recipe it calls for All-Purpose… which flour was used?
Oh, I’m sorry, I didn’t realize I made a mistake. Luckily, these muffins can be made both with whole wheat flour, all-purpose flour or combination of both. I choose whole wheat flour when I want them to be really healthy and all-purpose flour when I want them to be more like a dessert. They are good both ways!
