Ingredients
- 1 cup finely grated carrots (about 2 medium carrots)
- 1 cup mashed bananas (about 2 medium bananas)
- 1 1/2 cups crushed pineapple, drained
- 2 eggs
- 1/4 cup brown sugar
- 3/4 tsp vanilla extract
- 2 cups milk, dairy or non dairy
- 2 1/2 cups old fashioned oats
- 1/3 cups walnuts, ground or chopped
- 1/2 tsp cinnamon
- 3/4 tsp baking powder
- 1/2 tsp salt
Instructions

In a bowl, combine eggs, brown sugar, vanilla and milk. Add grated carrots, mashed bananas and curshed pineapple.

In another bowl, combine oats with walnuts, cinnamon, baking powder and salt.

Add oats mixture to eggs and carrot mixture and stir to combine. Pour into an lightly oiled 9×9 inch baking dish and bake ad 375 F (175 C) for about 45 minutes.
