Chia Seed Parfait – excellent breakfast treat or a light afternoon dessert.
If you like healthy food and have a sweet tooth at the same time, then Chia Seed Parfait is right for you. It is excellent breakfast treat or a light afternoon dessert. Preserving all the benefits of fresh fruit and chia seeds (I wrote about them in my Chia Jam post), with added yogurt culture and protein. Some sugar-free pudding is added for extra creaminess. Top is sprinkled with crushed bran flakes for added crunch (and fiber). You can put Chia Seed Parfait in a jar and place it n your kids lunch box, or eat it yourself at your work place.
- 1 Tbsp chia seeds
- 1/4 cup firm yogurt like Greek Yogurt
- 1/4 cup prepared sugar-free pudding
- 1 cup chopped fruit (I used peach and grapes)
- 1 Tbsp bran flakes, crushed
- sweetener to taste (agave syrup or honey)
Put chia seeds and yogurt in a small bowl. Soak chia seeds in yogurt for about 15 minutes.
Add prepared pudding and mix all together. Sweeten to taste, if necessary.
In a serving bowl or glass, layer chopped fruit with chia-yogurt-pudding mix. Sprinkle the top with crushed bran flakes for added crunch.
