Chocolate Peanut Butter Baked Oatmeal is an upgrade from regular oatmeal when you add peanut butter, cocoa, banana and some other flavor-boosting ingredients. It is warm, filling and healthy breakfast casserole with a very little sugar. It can be made ahead of time and reheated on busy mornings. You can eat it hot or cold, with a bowl of warm milk or cut it into bars and eat it on the go.

- 2 eggs
- 1/4 cups brown sugar
- 1/3 cup cocoa powder
- 1 tsp coffee granules optional
- 1 tsp vanilla extract
- 3/4 tsp baking powder
- 2 cups milk
- 1 1/2 cup mashed bananas about (3 large)
- 2 1/2 cup rolled oats
- 2 Tbsp peanut butter softened

In a large bowl, combine eggs, brown sugar, cocoa powder, coffe granules, vanilla and baking powder. Stir in milk, mashed bananas, oats and softened peanut butter.

Pour into a buttered 8×8 inch baking dish. Bake in the 375 F (175 C) preheated oven for about 45 minutes.

Serve warm or cold. Serving suggestion: mix equal amounts of peanut butter and maple syrup and drizzle over oatmeal. Sprinkle with little cocoa powder. If well covered, this baked oatmeal will keep in the fridge for about one week.
