Rainbow Quinoa Breakfast Bowl – healthy breakfast to cheer you up in the morning!
If you have already tried replacing classic oatmeal with Quinoa Porridge, you may want another serving suggestion for this healthy Quinoa Breakfast Bowl.
And if you’re anything like me, grumpy in the morning, this colorful breakfast is certainly going to cheer you up. And your kids will love it, for sure. Even if they’re normally not interested in eating fresh fruit, when they see it styled in a rainbow fashion, they will not be able to resist it.
Before cooking protein rich quinoa, be sure to rinse it thoroughly to remove its bitter taste. It can be cooked in any kind of milk, very similar to old fashioned oatmeal porridge, so that it is suitable for vegans.
- 1 cup quinoa thoroughly rinsed to remove a bitter taste
- 1 cup coconut milk or other milk of choice
- 1 cup of water
- 1/4 vanilla extract
- 1 teaspoon honey or sweetener
- sliced fresh fruit (blueberries raspberries, strawberries, apricots, bananas, kiwi...)

Put coconut milk and water in a saucepan over high heat. Add rinsed quinoa and vanilla extract. Cook for about 20 minutes, stirring from time to time, until all liquid is absorbed and quinoa is cooked through.

Put in serving bowl and add some more milk, if desired. Top with sliced fruit.
