Sweet Potato Butter – quick and easy way to prepare healthy and flavorful vegan spread in under 30 minutes.
I’ve done apple butter, pear butter and pumpkin butter already, but never sweet potato butter before. It is as easy to make as any other type of butter. You cook sweet potatoes in apple and orange juice with addition of spices like cinnamon, nutmeg and cloves. A tablespoon of molasses ads another layer of flavor (and darker color). Some grated orange zest can be added, too. In the end you sweeten it with sweetening of your choice: stevia, agave syrup, honey or maple syrup.
I peeled my sweet potatoes, but you can use them unpeeled if you have blender powerful enough to turn it into a paste.
Add more apple juice if you want your Sweet Potato Butter to be thinner. Keep in a jar in your refrigerator for a few days.

- 3 cups peeled and cut sweet potatoes
- 1 cup apple juice 100 %
- 1/4 cup orange juice
- 1 Tablespoon molasses or 1/4 cup brown sugar
- 1 tsp cinnamon
- a pinch of nutmeg
- cloves a pinch of ground
- stevia or agave syrup or honey or maple syrup to taste

Put sweet potatoes together with apple juice, orange juice and molasses into a pot. Add cinnamon nutmeg and cloves. Cook on low heat until sweet potatoes are soft, about 15-20 minutes.

Mash with immersion blender (you can use regular blender, too). Sweeten to taste.

Pour into a jar and keep refrigerated.
