Homemade Pancake Mix – ready in minutes using a few basic ingredients. Easy!
It’s a lazy Sunday morning and you need to make pancakes for breakfast, but don’t have any store-bought pancake mix in your pantry? No problem, you can fix it in a minute with a few basic ingredients. If you double, triple or multiply the ingredients, you can even save it for the next time in a sealed container.
Another good thing about this basic recipe is that there are no surprise ingredients like those you find in boxed mixes.
Now you can make a pancake or two whenever you crave it. So easy!
- PANCAKE MIXTURE:
- 1 cup all-purpose flour
- 1 Tbsp sugar
- 3/4 Tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- TO MAKE PANCAKES:
- 1 cup pancake mix
- 1 egg
- 3/4 cup milk
- 1 Tbsp oil
- OPTIONAL:
- 1 tsp vanilla
- 3/4 cup fresh fruit

PANCAKE MIXTURE*: Mix flour, sugar, baking powder, baking soda and salt. Put in a jar and close the lid. Store for up to 3 months.

TO MAKE PANCAKES: When ready to make pancakes, take 1 cup of the mix, add 1 egg, 3/4 cup milk, 1 Tbsp oil and any other optional ingredients you're using. Stir just to combine. Cook on a pan or a griddle as any other pancake.
*The mixture ingredients can be multiplied 2, 3, 4 or more times.

Pretty much like the recipe I have ; only difference is I use Club Soda in place of the milk. Husband and myself have been married for 48 years and I have always used Club Soda only because when we where first married had no milk in the house but did have club soda so thought I would try it. After all it was a liquid. Liked the pancakes so much that have used C S ever since. Makes for a lighter, fluffier pancake.
I believe it works. I always add a little bit of sparkling water to every pancake batter. It makes them fluffier.
What can I use in place of egg
In place of one egg you can use:
1/4 cup of buttermilk or yogurt OR
1/4 cup pureed fruit (banana, applesauce, prunes) OR
1 teaspoon of flax seed powder + 1/4 cup of water OR
1/4 cup of whipped silken tofu OR
1 teaspoon of baking soda + 1 tablespoon of vinegar.
