Cottage Cheese Pie is traditional Croatian dessert. It consists of light cheese filling with wonderful lemon-vanilla aroma between two crumbly shortbread crusts.
To make shortcrust pastry, just combine flour, butter, sugar, baking powder, egg yolks and lemon rind, without overworking it.
For cottage cheese filling, you combine beaten egg whites with cottage cheese, sugar, vanilla, lemon zest and semolina mixture. I’ve heard that some people sprinkle the top with nutmeg, but I never do that.
This filling will have a slightly crumbly texture. If you want you can whip cottage cheese before making filling with a fork or a mixer to make it very smooth, similar to cream cheese. Depending on where you live in the world, you may find in your shops cottage cheese that is already very smooth. That way you will get more custard-like texture.
Baked Cottage Cheese Pie has taste somewhat similar to cheesecake, but it is much more firm in consistency. Each slice can be cut into rectangular or triangular shape.
If there is any pie left, you can keep it in refrigerator.

I am looking for a Croatian recipe for a sweet baked cheese desert that has lemon in it. It involves pouring in a (pourable) mixture (like a pancake mixture) into the bottom of the dish – then the cheese mixture – then more of the pancake type mixture on top – then baked.
I would love this recipe if anyone has it.
Many thanks,
Suzi
