This is traditional Croatian way of cooking summer squash stew. It is quick, easy, creamy, true comfort food. You can make it with frozen squash as well.
Squash Stew - Croatian Recipe
- 500 g (1 lb 2 oz) summer squash, grated
- 2 Tbsp oil
- 2 Tbsp flour
- 1 small onion chopped
- 1 cloves garlic minced
- 1 cup cream or vegan cream substitute
- 1 tsp fresh dill chopped
- salt pepper
Season squash with salt and let stand for 1 hour. Squeeze squash and discard liquid.
Make a roux: heat oil in heavy pot, add flour, stirring constantly. Cook for 1 minute. Add onion, garlic and squash. Cover with water. Cook until squashis soft.
Add cream, pepper and dill. Cook for a short time or until thick. Serve with mashed potatoes.
