Zlevanka – Croatian sweet cottage cheese cornbread.
Zlevanka is a sweet cornbread from northern Croatia. The batter is very thin and it is poured into a large baking sheet, so that it comes out thin. It can be sweet or savory.
There are many different version of this dessert. Some people like to eat it served with a homemade plum jam. Nuts, fruit or spices can also be added to the mixture.
There was a nice bakery near the place I worked that sold two types of Zlevanka, one topped with sour cream and the other similar to this recipe of mine. I liked the second one so much that I was buying it for lunch all the time. I wanted to make it myself, but didn’t have the recipe so I made countless versions of different recipes until I tweaked it to taste similar, if not the same, to that bakery Zlevanka. In my opinion this recipe is now perfect.
Zlevanka is not only a dessert, but it can be a great healthy breakfast, accompanied with a glass of milk, or a delicious afternoon snack.

- 3 whole eggs
- 1 cup sugar 15 Tbs
- 2 cups corn flour
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 cup sour cream
- 1 cup sunflower oil or canola oil
- 1 cup milk
- 1/2 kg (1 lb 2 oz) cottage cheese
- 2 tsp vanilla extract

Mix together eggs and sugar.

Add corn flour, all-purpose flour, baking powder, sour cream, oil, milk, cottage cheese and vanilla.

Pour into a large oiled baking tray.

Bake for about 20 minutes at 180 C (350 F).

When you say large baking pan, how large? I’ve tried this recipe twice and both times the cake/bread was so moist and dense, like not cooked enough :(. I’ve left it in for an hour! The outsides that were not as dense were delicious. I’ve even turned the temperature higher. Please help 🙂
In my experience, the best pan for this recipe is the one that I got together with my oven. It is 12×15 inches (30×40 cm) large. When baked, Zlevanka should be not more than about 1 inch high. I guess your pan was to small so the batter was to high and couldn’t cook properly.
I had the same problem. It would have been good to put the size of the pan needed in the recipe. I also think that if I knew the batter shouldn’t be more than 1 inch, that too would have been helpful
Hi there, just need some clarification on this measurement: 1/2 kg cottage cheese 1 lb 2 oz – is it 1/2kg or 1lb2oz? Its a bit confusing
It is 1/2 kg cottage cheese for those using Metric System measures OR 1 lb 2 oz for those using Imperial System.
