Ambrosia Salad is a traditional creamy fruit salad with pineapple chunks, mandarin oranges, fresh or canned fruit, marshmallows and whipped cream (or whipped topping, suitable for vegans).
Sometimes coconut, apples and pistachios are added, too. It can also include maraschino cherries, peeled seedless grapes, strawberries, bananas or chopped pecans. Part or all of the whipped cream can be substituted with sour cream, Cool Whip, (Greek) yogurt, pudding or even cream cheese. You can add mini colored marshmallows to add some color and flavor. Ambrosia Salad is very adaptable. Use ingredients that you like or that you have at hand.
Staple at almost every feast in the South, fresh and light Ambrosia Salad is delicious holiday dish as well as everyday treat. It is usually served up for Christmas and Easter, and during whole summer. Kids love it every time.

- 19 ounces canned fruit (like mandarin oranges pineapple etc), drained, (540 g)
- 1 cup miniature marshmallows
- 1 cup shredded coconut
- 3 1/2 cups whipped topping or whipped cream

In a large bowl, combine mixed fruit with marshmallows and coconut.

Add whipped cream and toss to mix. Cover and chill for several hours before serving.

I like to use sour cream and not the whipped cream. Use cherries in jar mini marshmallows,mandarin oranges and slice them in half….sometimes add cocoanut and some nuts. It always tastes better the next day because some of the fruit juice absorbs with the sour cream into the marshmallow more.

I also use the sour cream. I started with a 5 C salad recipe from my mother, but triple it for my family dinners. ! cup of each,sour cream, mini marshmellows, chunk pineapple,coconut, mandarin oranges. Then to make it into ambrosia I add the cool whip, and cherries.to taste. You could add any thing, such as sliced bananas, grapes etc. Just increase your whip topping and sour cream accordingly. Love this, it is very refreshing.

Fresg red grapes, halved, go excellent in this. I use fresh fruit, not canned.
I add cottage cheese also and pecans. I use the crushed pineapple.
I make this a lot , I put them in mason jars and keep refrigerated.
