It is always handy to have some homemade protein balls in your fridge. They can pick you up after training and help you restore your energy, serve as a snack in between meals or you could use them to satisfy your sweet tooth.
Apricots and oranges go so well together. If you coat these protein balls in chocolate or roll them in dessicated coconut, you will get a delight that you can easily serve on your holiday table.
This time I placed Apricot Orange Protein Balls in a Christmas cup and I think they look really cute!

Ingredients
- 2 cups (9 oz; 250 g) dried apricots
- 1/3 cup orange juice
- 1/2 cup almond meal or finely chopped almonds
- 2 tsp agave nectar or honey
- 1/4 cup protein powder
- 1 Tbsp coconut oil
- 1/4 tsp grated orange zest
- a pinch of cinnamon
- 1/2 tsp vanilla extract
- GARNISH : dessicated coconut, melted chocolate (optional)
Instructions

Process dried apricots until finely chopped. Add orange juice and blend to a thick paste.

Add remaining ingredients and process until combined.

Take a small amount of apricot mixture and roll into walnut-size balls.

OPTIONAL: Roll balls in dessicated coconut or coat them in melted chocolate.
