After huge success with Blueberry Banana Baked Oatmeal I decided to try another recipe from BudgetBytes.

Baked Oatmeal with Pumpkin
Servings: 6
Ingredients
- 2 large eggs
- 1/4 cup sugar or other sweetener*
- 3/4 tsp vanilla extract
- 1/2 tsp salt
- 3/4 tsp baking powder
- 2 cups milk
- 2 cups pumpkin puree or 15 oz. can
- 2.5 cups old fashioned oats
- 1 tsp pumpkin pie spice (blend of cinnamon ginger, allspice, cloves, nutmeg)
Instructions

In a large bowl, combine eggs with sugar or sweetener, vanilla, salt, and baking powder. Stir in milk, pumpkin puree, oats and spice.

Pour into a buttered 8×8 inch baking dish. Bake for about 45 minutes in the 375 F preheated oven.

*I used 2 tsp white stevia powder.
