Cappuccino Icebox Cake – easy, no bake treat with graham crackers softened with airy cream-yogurt-cappuccino filling; only 6 ingredients!
- Cappuccino Icebox Cake Ingredients:
- 3 Tbsp instant cappuccino mix + 2 Tbsp water or milk
- 2 cups whipping cream
- 2 cups Greek yogurt
- 2 tsp vanilla extract
- 4 Tbsp brown sugar
- about 300 g (10.5 oz) graham crackers
- 5 Tbsp instant cappuccino mix + 1/4 cup warm milk for soaking crackers

In a small bowl, combine 3 Tbsp instant cappuccino mix with 2 Tbsp water.

In a large bowl, mix whipping cream until soft peaks form. Add cappuccino-water mix, Greek yogurt, vanilla extract and brown sugar.

In a shallow dish or plate, blend 5 Tbsp instant cappuccino mix and 1/4 cup warm milk. Soak each graham cracker in this mixture for a few seconds before putting into a pan.

Place one single layer of graham crackers in the bottom of a 8x8" pan.

Spoon 1/3 of the cream-yogurt mixture over the crackers and spread evenly. Repeat with two more layers of crackers and cream mixture. Cover and chill for at least 2 hours.

Before serving, lightly dust Cappuccino Icebox Cake with cocoa powder for decoration.

Janet, graham crackers are thin wholemeal crackers that are sweet and taste a little like molasses (light treacle). Some people will say you can substitute digestive biscuits in recipes calling for graham crackers, and maybe you can, but they are not even remotely similar in either taste or texture. They are not hard to make and there are recipes all over the internet (here’s one–http://bakingbites.com/2005/04/homemade-graham-crackers/). Just make sure you use extra coarse wholemeal (called “whole wheat” in the US) flour, which is the equivalent of American graham flour, in place of whole wheat if it’s called for in the recipe.… Read more »

In the past, I successfully substituted graham crackers with digestive biscuits or whole wheat butter biscuits in similar desserts. It is not the same, but it still tastes delicious.
Your recipe is ok, but needs some tweaks.
The taste was fine, but the amount for ingredients needed to be increased. Also, the whipped cream should be stiff peaks vs soft peaks.
I used Lady Fingers.
That is also a good idea. Then it resembles Tiramisu.
I like your recipes but find many of them to have errors of one kind or another and/or confusing
amounts of ingredients. This recipe has both. First, what or how many are 300 g graham crackers. Most recipes show the NUMBER of graham cracker squares to use. Second, the first ingredient shows cappuccino mix + 2 Tbsp. milk but in #2 of the INSTRUCTONS you list cappuccino-water mix. There is no cappuccino-WATER mix shown under INGREDIENTS.
I’m sorry if my instructions were not clear. I avoid using the number of crackers in the recipe because readers of my blog come from all over the world and each company in every country produces different size of crackers, so it is hard to compare. That is why I gave approximate weight of the cookies, which is more universal. 300 g of graham crackers is about 10.5 oz.
