Last week I made a Magic Cake and it was really great. Some of you asked me about different flavors that could be added to the batter, so I experimented a little bit and came up with chocolate, red velvet and fruit variation of the magic cake. Actually, I made it with two types of fruit – red berries (strawberry/raspberry/red currants) and blue berries (blueberry/blackberry/black currants). See if you like it!

Magic Cake - Part II - Chocolate, Red Velvet, Fruit
Servings: 8
Ingredients
- 1 magic cake batter
- Choose one of the following flavoring combinations:
- CHOCOLATE: add 1/2 cup cocoa 2 Tbsp strong coffee and 1 Tbsp rum to the batter
- RED VELVET: 1 Tbsp cocoa about 2 teaspoons liquid red food coloring (or 1/4 tsp powdered red food coloring)
- tsp FRUIT: 1/2 grated lemon zest fruit of your choice (enough to cover the bottom of your pan)
Instructions

For CHOCOLATE and RED VELVET cake: Add flavors of your choice to the magic cake batter, prior to folding in beaten egg whites. Proceed with the recipe.

For FRUIT Cake: Place fruit on the bottom of your cake pan. Lightly dust with a little bit of flour (to prevent the mixture from coloring). Pour the magic cake batter on top. Bake.

Wow, thank you, thank you, thank you! First of all for the original version, which I am going to make again soon. And for all these variations. I was so impressed with this cake that I was afraid to change even the smallest ingredient, so thank you for doing all these experiments. The blueberry version looks wonderful, it’s practically adding the fourth layer to the cake. I will definitely try that!

I expected fruit to stay on the bottom of the pan, but it floated up to the middle layer. The flavor was still good though.
This is absolutely genius! I’ve been meaning to make the original version of the magic cake, I’ll also have to try it. Great pictures btw!

Can frozen fruit be used for the fruit version? Will it make a difference to the recipe?

You can use frozen fruit. I would just thaw it first.
