Easy Peach Turnovers – taste like croissants filled with peach pie filling!
Peach season has begun! Peaches are one of my most favorite fruit. I like to eat them raw, but I don’t mind a good Peach Cobbler or a slice of Peach Crumb Bars.
Here is another very simple recipe for a delicious summer dessert: Peach Turnovers. They taste like croissants filled with peach pie filling.
There is no need to make a dough. Use store bought puff pastry, some sliced and seasoned peaches, pop in the oven and in about 25 minutes you’ll have supreme dessert. Even store bought peach pie filling would work fine in this recipe.
You can use raw or canned peaches, both will work well. My favorite spices for this recipe are cinnamon, lemon zest and almond extract as they compliment peaches flavor nicely. You can season them any way you like to suite your taste. The filling is not very sweet so I sprinkled turnovers with some powdered sugar. You can also drizzle them with a glaze which I used for Apple Turnovers (recipe here).
When you serve these Peach Turnovers on your next party, they will disappear from the table in a second!

- 1 sheet puff pastry, defrosted (1/2 of the 17.3 ounces package)
- 2 small peaches, (about 1 1/2 cup diced)
- 1/4 tsp grated lemon zest
- 1 tsp freshly squeezed lemon juice
- 1/8 tsp ground cinnamon
- 1/8 tsp almond extract (optional)
- 2 Tbsp brown sugar
- 1/2 Tbsp cornstarch
- 1 egg beaten with 1 Tablespoon milk

Dice fresh (or canned) peaches (no need to peel them). Toss them with the lemon zest and juice, cinnamon, almond extract, brown sugar and cornstarch.

On a floured surface, roll out puff pastry to a square. Cut it into 8 smaller squares. Brush the edges of each square with the egg wash. Place about a little bit of peach mixture on each square. Fold one corner of the dough over to form a triangle. Press the edges with a fork to seal them.

Place triangles on a baking sheet lined with parchment paper. Brush turnover tops with egg wash and make 3 small slits to allow the steam to vent. Bake in 400 F preheated oven for 20-25 minutes or until golden.

Serve Peach Turnovers sprinkled with powdered sugar.

If I were you, I would saute onion with corn, broccoli, spinach and carrots in a little bit of olive oil or butter. Season with salt, pepper and thyme or your favorite spice blend. Then use this mixture to fill store-bought puff pastry. You can serve it with dill sauce, for example.
