When I was searching for an edible cookie dough that is safe to eat, all I could find where recipes with no eggs, which is OK. But still they all used raw flour, and that concerned me. If you look at this article you will see that eating raw flour can cause food poisoning by the dangerous Shiga toxin-producing E. Coli. Wheat flour can also be contaminated with Salmonella. So, that started me thinking about the ways to eliminate that danger, too.
I remembered a trick that my mother used when she was preparing roux. Instead of frying flour in oil (which is really unhealthy), she would put flour in an empty pan and heat it, stirring, until it turned golden in color. Then she would mix it with oil. This gave me an idea to use that to create completely safe cookie dough.
You should heat flour until it starts changing color. Don’t let it cool in the pan, transfer it immediately to another bowl, because the pan is hot and the flour will continue cooking. It can easily burn that way.
Instead of butter, vegans can use margarine or nut butter. Sugar, or part of it, can also be replaced with sweetener like stevia or Splenda. I used sugar and stevia combination.
I don’t see the point of using baking soda in recipes that do not require baking, so I omitted it completely.
This recipe is, obviously, not raw, but it still has that soft, gooey texture of the raw cookie dough that people love so much. And it is safe to eat.
- 1 cup flour
- 1/4 cup butter or vegan margarine or nut butter
- 3/4 cup brown sugar or ¼ cup brown sugar + sweetener equal to ½ cup sugar
- 1/4 tsp vanilla extract
- pinch of salt
- 1/4 cup milk of choice
- 1/2 cup chocolate chips

Place flour in a non-stick pan and heat, stirring constantly, until it starts changing color. Immediately transfer to another bowl because, if you live it in the pan, the flour will continue cooking and it could easily burn.

Add butter, sugar, sweetener, vanilla and salt and mix to combine. Let cool to room temperature. Gradually add milk until you get the consistency that you like. Stir in chocolate chips. Enjoy!
