I have never tried putting egg whites into oatmeal before, and I was a little bit scared to do it. Egg whites are a good source of protein to help diabetics balance their blood sugar, which is especially important in the morning. So, I tried making Brianne’s chocolate oatmeal pudding with Mexican spices, and I must admit it was pretty good. You can add some more milk if you like thinner oatmeal.
- 1/3 cup old-fashioned oats
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- a pinch of cayenne pepper
- a pinch of salt
- 2 Tbsp unsweetened cocoa powder
- sweetener of choice
- 1/2 cup milk of choice
- 1/2 c water
- 1 tsp butter (optional)
- 2 eggs whites, lightly beaten
Combine oats, spices, salt, cocoa, sweetener, milk and water in a saucepan. Cook for 5-7 minutes or until oatmeal is cooked.
Add butter and egg whites, stirring constantly, and cook until mixture thickens slightly, about 1-3 minutes.
