You choose not to use eggs in your diet? Or you cannot eat them for some reason (health, religion etc)? Or you simply ran out of eggs? You can still make these delicious eggless pancakes.
Eggless Pancake Recipe
- 2 cups flour
- 3 tsp baking powder
- a pinch of salt
- 2 tsp sugar
- 2 cups milk
- 2 Tbsp rum
- 3 Tbsp oil
Sift together flour, baking powder, salt and sugar.
Add milk, water and oil.
Whisk until ingredients are combined. Let sit for five minutes.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour approximately 1/4 cup batter into the pan. When bubbles come up to the middle turn your pancake. Cook each side until the golden brown.
Serve with little bit of melted butter and maple syrup.
Instead of all-purpose flour you can also use whole wheat flour. You can also add berries, chopped nuts or chocolate chips to batter before cooking.
