About a month ago I was looking for a diabetic peanut butter cookies recipe. After I tried this one, which was OK, but nothing spectacular, I decided to try another kind of low carb cookies, using almond meal, cream cheese and chocolate chips. I think they were much better.
- 1 cup almond meal almond flour
- 2 eggs beaten
- 1 Tbsp butter
- 3 Tbsp sugar substitute
- 1 tsp vanilla extract
- 1/2 cup peanut butter
- 1/2 cup Philadelphia whipped cream cheese
- 6 Tbsp sugar-free chocolate chips
Mix all ingredients with a fork or spatula.
Spoon out on a cookie sheet lined with parchment paper.
Bake for 15-25 minutes in preheated 325 F oven.
