- 3 cups all-purpose flour
- 3 Tbs cocoa powder
- 1 ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup butter
- ½ cup light brown sugar
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 teaspoons liquid red food coloring or 1/2 tsp powdered red food coloring
- 1 cup sour cream
- 4 ounces cream cheese, at room temperature
- 4 tablespoons unsalted butter
- 3 ½ cups powdered sugar
- 1 teaspoon vanilla extract
COOKIES: In a bowl, combine flour, cocoa powder, baking powder and salt.
In another bowl, mix together butter and both sugars until fluffy. Add eggs, vanilla and red food coloring.
Mix in flour mixture and sour cream.
Drop a tablespoon of batter onto baking sheets lined with with parchment paper and repeat, spacing them at least 2 inches apart. Smooth the tops with a damp finger. Bake for 10 – 15 minutes in 350 F preheated oven.
FILLING: Beat together the cream cheese and butter. Add sugar and vanilla and eat until smooth. Spread the filling onto the flat side of one cake and top with another cake, flat-side down.
