Raspberry Crumb Bars are made with flaky, buttery shortbread crust and flavorful fruity raspberry filling while lemon zest gives them a fresh taste. They are so simple to make that you don’t even need a rolling pin – just spread the half of the dough on the bottom of your pan, top with raspberry filling and grate the other half of the dough over it.

Raspberry Crumb Bars

Ingredients
- DOUGH:
- 300 g flour 2 1/2 cups
- 1 egg
- 1/2 tsp baking powder
- 200 g butter 7 oz; 16 Tbsp; 1 1/2 stick + 2 Tbsp
- 6 Tbsp sugar
- 2 Tbsp sour cream
- zest of 1/4 lemon
- FILLING:
- 3 Tbsp cbread crumbs
- 500 g raspberries fresh or frozen, 1 lb
- 8 Tbsp sugar 1/2 cup
- 1 tsp vanilla extract
- zest of 1/4 lemon

DOUGH: In a bowl, or in a food processor, mix all ingredients for the dough until they are just blended together.

FILLING: In a large bowl, combine raspberries with vanilla extract, lemon zest and sugar.

ASSEMBLE: Divide the dough in half. Place one half of the dough into the bottom of the 11×8 inches (30×22 cm) non-stick baking pan. Sprinkle with bread crumbs. Top with raspberry filling. Grate the other half of the dough on top of the filling (use a grater with large holes, like the one for grating apples).

Bake for about 40 minutes at 190 (375 F) or until the crust is golden.

Just regular dry bread crumbs. Or you can use some leftover cookie crumbs or cake crumbs.
You said 1 lb of Raspberries. How many cups would this equal. I grow them for home use.
I would say about 4 cups.
