Ingredients
- 2 soft persimmons
- 1 ripe banana
- 1/2 tsp rum, optional
- 1/2 tsp vanilla essence
- 2 Tbsp raw cane sugar or honey or other sweetener
- 2 Tbsp whipped topping or whipped cream, optional
Instructions

Peel and slice persimmons. Put them in blender together with all other ingredients and blend until smooth.

Serve immediately with whipped topping.
I made this today. I actually skipped the sugar, and it was still sweet and perfect and I did not have to feel guilty about having a dessert after a big dinner. And it only took 3 minutes to put together. Thank you so much for this brilliant recipe. It will be a regular in our house.
p.s. I used to make persimmon / yogurt mousse or persimmon / cottage cheese mousse. Very similar to this, only without the banana. It’s been a while since I had those, so I don’t remember the differences exactly, but the idea is similar.
