Vegan Fruit Salad – deliciously creamy dessert, low in calories.
Fruit salads are excellent desserts, because they are low in calories but still satisfying sweet tooth. Recipe for this raw Vegan Fruit Salad is deliciously creamy, resembling Ambrosia Salad, but does not contain any dairy cream dressing. Instead, it uses cashew cream made from scratch. If you cannot find cashews in your local store, you can use any other vegan cream you like.
Even though it is possible to use canned fruit for this salad, I prefer using fresh fruit whenever possible. Vegan Fruit Salad can be served at the end of a meal, or as a healthy afternoon snack.

Ingredients
- 1/2 cup cashews
- 1-2 tsp agave nectar or honey or other sweetener
- 1/4 tsp vanilla extract
- 3 cups fresh fruit cubed
- leaves garnish : poppy seeds, dessicated coconut, dry fruit (currants, goji berries), fresh mint, optional
Instructions

Soak cashews in water for a few hours or over night. Next day, drain cashews, put them in blender together with about 1/3 - 1/2 cup water (enough to cover them). Add agave nectar and vanilla extract and blend until smooth.

Place cubed fruit in a bowl, pour cashew cream over it and gently mix with a spoon.

Transfer into serving glasses. Garnish with poppy seeds, dessicated coconut, dry fruit and fresh mint leaves.
This looks very refreshing. Would make a nice change for my Vegan daughter for whom I always make a Vegan Chocolate Cake and buy Vegan Ice-Cream.
