Cantaloupe Smoothie with almond milk, banana and spices is a great and healthy way to start a day!

Cantaloupe (melon) is a great, but underestimated fruit, rich in vitamins A, B-9, C, fibers, potassium and other minerals. It is low in calories and therefore an ideal fruit for weight loss. When you combine it with banana and almond milk, you get a great, healthy, vegan drink or even breakfast replacement.

I added some lemon zest because I love its aroma in my smoothies. I started doing that when I was mixing my green smoothies and wanted to mask their grass-like flavor. If you have powerful enough blender, you don’t even need to grate the zest. Just cut a piece of lemon rind (only yellow part, not the white one which is bitter), about 1/2-inch diameter, and pop it into the blender. If your blender cannot handle the whole rind, you can grate it instead. In case you don’t like lemon zest – just skip it.

Additional spices I used are cinnamon and vanilla powder, which I made myself using my
Homemade Vanilla Powder recipe. It can be substituted with vanilla extract or omitted altogether if you don’t want to use it.
Some other fruit can be added to this basic mixture like strawberries or blueberries. Also, part of milk can be substituted with yogurt, either vegan or dairy.

- 1 cup cubed cantaloupe / melon
- 1 cup sliced banana
- grated lemon zest
- a dash of cinnamon
- a dash of vanilla powder or vanilla extract
- 1/2 cup almond milk
- Optional ingredients: ice cubes, sweetener – honey or maple syrup or stevia

Place cubed cantaloupe, sliced banana, grated lemon zest, cinnamon, vanilla powder (or vanilla extract) and almond milk in a blender. Add optional ingredients like ice cubes and sweetener. Blend until smooth.

Pour Cantaloupe Smoothie into a glass and enjoy immediately.

Good combination–my lemon rind (zest) did not break down with my Vitamix, even on high.
In that case you might want to great the rind (zest).
