This delicious eggnog recipe is not only diabetic friendly, but also safe to serve because the eggs are cooked in milk.

Ingredients
- 2 large eggs room temperature
- 1/4 cup fructose sugar or 1/16 teaspoon stevia powder or a few drops of stevia extract
- 2 cups low fat milk
- 1 tsp vanilla extract
- 1/8 tsp freshly grated nutmeg
- 1 oz (30 g) brandy or bourbon optional

In a saucepan, whisk together eggs and fructose sugar until all of the sugar is dissolved. Whisk in milk, vanilla and nutmeg.

Turn heat to medium. Bring mixture just to a simmer (160F). Do NOT allow the eggnog to boil, or it will curdle. Hold at that temperature for 1 minute, then remove from heat. Strain and chill for at least 4 hours.

When ready to serve, pour into glasses, add brandy and sprinkle with additional nutmeg.
