Thai Iced Tea is a popular iced drink from Thailand, made from very strong black tea spiced with star anise, crushed tamarind, cardamom and other spices. It is sweetened with sugar and condensed milk, and served over iced. Because I wanted caffeine-free version, I made it with rooibos tea.

Ingredients
- 3/4 cups black tea leaves (or rooibos tea)
- cardamom and other spices, to taste
- 6 cups boiling water
- 1/2 cup sugar or sweetener
- 1 1/2 cup evaporated milk or evaporated milk substitute, whole milk, half and half, or coconut milk
Instructions

Steep the tea leaves and spices in boiling water for 5 minutes, then strain. Stir in sugar until dissolved. Allow to cool to room temperature.

Fill 6 glasses with ice. Pour in tea mixture. Top off with evaporated milk, but do not stir.
