What is Moo Goo Gai Pan?
Moo Goo Gai Pan is a Chinese / Cantonese (Guangdong province) dish made of chicken and mushrooms. Americanized version added various vegetables to it.
What does Moo Goo Gai Pan mean?
Moo Goo means “button mushrooms”, while “Gai Pan” means sliced chicken.
What are Moo Goo Gai Pan ingredients?
Main ingredients are button mushrooms (or oyster mushrooms or shiitake) and sliced chicken. Vegetables that are usually added in restaurants are snow peas, bamboo shoots and water chestnuts. Any other vegetable can be added as well, like carrots, napa cabbage, bok choy, broccoli, bell peppers, spring onions, ginger, celery stalks etc.
What is Moo Goo Gai Pan sauce made of?
Moo Goo Gai Pan sauce is made of water or chicken stock with the addition of Shaoxing wine or Sake, soy sauce, oyster sauce and sesame oil. It is thickened with cornstarch.

Chicken breast for this dish is sliced into thin strips. Then it is coated with egg white + cornstarch mixture to create velvety texture.

Does Moo Goo Gai Pan have MSG?

- 1 lb chicken breast cut into thin stripes
- MARINADE:
- 1 egg white
- 1/2 tsp salt
- 1/8 tsp ground pepper
- 2 tsp cornstarch
- VEGETABLES:
- 2 cups button mushrooms or oyster mushrooms or shiitake, sliced
- 1/2 cup celery stalks, sliced
- 1/3 cup each red yellow and green bell peppers, cut into large chunks
- 3 slices ginger
- 2 garlic cloves, sliced
- 1/4 cup spring onions, sliced
- 1/4 cup carrots, thinly sliced
- 1/2 tsp sugar
- 3 + 1 Tbsp vegetable oil
- 1/4 cup water or Chicken stock
- SAUCE:
- 1/4 cup Shaoxing wine or Sake
- 1 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1/4 cup water
- 1 Tbsp cornstarch
- 1 tsp sesame oil

Mix egg white with salt, pepper and cornstarch. Coat sliced meat with this mixture.

Put 3 tablespoons oil into wok or large frying pan. Add chicken and fry until almost done. Remove from pan.

Add remaining oil and sliced vegetables. Fry until soft to your liking. Return meat to wok / pan.

SAUCE: Mix Shaoxing wine with soy sauce, oyster sauce, water, cornstarch and sesame oil. Pour sauce over the vegetable and meat mixture and cook, stirring from time to time, for at least one minute or until sauce thickens.

Serve Moo Goo Gai Pan over cooked rice.
