Date Paste (also called date syrup or date honey) is one of the healthiest natural sweeteners as it contains only pureed fruit and water. It can be easily made at home at any time.
Dates are natural source of dietary fiber, antioxidants, 23 types of amyno acids, vitamins like A, B, C and K and the essential minerals like iron, potassium, magnesium, copper, selenium and manganese. Dates are good for your eyes, skin, heart and digestive system. From health standpoint, dates could be considered nearly ideal food.
Date Paste can be used instead of liquid sweetener (agave nectar, honey, maple syrup) in many recipes. Use date paste to sweeten your oatmeal, smoothies, yoghurt, puddings, pancakes, waffles, hot chocolate etc. It can even be used as a healthy jam substitute to spread it on your bread, muffins or cookies.
Date Paste should keep in your fridge for about 1-2 weeks or in the freezer for up to 3 months.

- 2 cups dried dates, pitted
- 2 cups water

Soak dates for 1-2 hours (or even over night, if your dates are very dry). If you're using fresh dates, soaking time will be much shorter.

Drain dates, but reserve the water. Put dates into your blender or food processor. Blend adding one by one tablespoon of soaking water until you get desired consistency.

Transfer date paste in a jar and store in a fridge for 1-2 weeks. Or freeze in ziplock bags for up to 3 months.
