Cauliflower Crust Pizza – low-carb, low calorie, diabetic friendly way to enjoy your pizza.
I’ve been planning to make this Cauliflower Crust Pizza for over a year. Even though I had lot of success with using cauliflower when I was making lighter Fettucini Alfredo of replacing part of the mashed potato with Mashed Cauliflower, still I was reluctant to try this recipe. I just couldn’t imagine how can cauliflower be used instead of pizza dough.
The procedure itself is not complicated. You use some Riced Cauliflower, mix it with an egg and shape into a circle. Bake for 10 minutes, top with your favorite toppings and bake for 10 more minutes. That’s it!
The taste of this Cauliflower Crust Pizza is certainly not the same as traditional pizza dough, but if you are on a low-carb diet or if you are diabetic, this can certainly be the way to enjoy your pizza without carbohydrate overload.

- 2 cups riced cauliflower*
- 1 egg
- 1 cup grated Italian cheese mix (mozzarella, parmesan etc)
- salt, pepper, oregano
- TOPPINGS: ketchup, vegetables, cheese, ham, olives etc.

Steam riced cauliflower for 15-20 minutes or until soft. Instead of steaming, you can microwave or bake cauliflower in the oven. Let cool.

Put cooled cauliflower in a linen tablecloth and squeeze out the liquid.

Mix cauliflower with lightly beaten egg, cheese and seasonings. Pat into a round shape on the pizza pan lined with baking paper. Bake for about 10 minutes at 425oF.

Take pizza out of the oven, top with toppings of your choice and return to the oven. Bake for another 10 minutes.
*Riced cauliflower is grated or processed in a food processor until the texture resembles rice grains.
