Incredibly Easy Thai Peanut Sauce Noodles – one-pot simple pasta with 1-minute, no-cook peanut sauce!
Sala from VeggieBelly.com blog posted an interesting recipe for Stupidly Easy Peanut Noodles. She came up with simple but genius idea to cook broccoli florets first, then use same water to cook noodles. Sauce is made by just mixing all ingredients together.
You can use other vegetables instead of broccoli, whatever you have at hand.
I liked the recipe as it was, but I decided to tweak it by adding some Sriracha sauce, a tablespoon of honey, some minced fresh ginger and rice vinegar.
The recipe for Incredibly Easy Thai Peanut Sauce Noodles is easy and forgiving one, which you can change according to your taste.

- 2 cups broccoli florets
- 8 oz 225 g spaghetti, udon or other noodles
- SAUCE:
- 3 Tbsp hot water (you ca use pasta water)
- 3 Tbsp peanut butter
- 2 Tbsp soy sauce
- 3/4 Tbsp lime juice
- 1 Tbsp sesame oil
- 1-2 garlic cloves minced
- red chili flakes or 1 Tbsp Sriracha sauce (optional)
- 2 Tbsp cilantro or pasley or green onion chopped
- 1 Tbsp honey
- 3/4 Tbsp minced ginger
- 1 Tbsp rice vinegar (optional)

Cook broccoli florets in plenty of salty water. Take out with slotted spoon.

Put spaghetti or noodles in the same pot with water and cook according to package directions.

Reserve some water from cooking and drain the pasta.

In the meantime, mix all ingredients for the sauce, adding hot pasta water, little by little, until you get desired consistency.

Combine drained pasta with broccoli and sauce. Adjust seasoning to your liking. Can be eaten hot or cold.
