Quinoa Fried Rice – if you like regular fried rice, you will like this low-carb, recipe, too.

As gluten-free grain, quinoa is an excellent substitute for rice or couscous. All people on low-carb diet, as well as diabetics, can enjoy the taste of this popular Asian dish without compromising their health.
You use quinoa in the same way as you would use rice. Cooked and chilled quinoa is added to fried vegetables and stir-fried for a minute or two together with sauces and spices. Using frozen vegetables is another shortcut to skip peeling and chopping so you can have a healthy homemade meal in just a few minutes.
- 1/2 Tbsp oil
- 1 Tbsp butter
- 1 egg
- 2 green onions, chopped
- 1 1/2 cup frozen vegetables
- 2 cups cooked quinoa*
- 1 1/2 Tbsp soy sauce
- 1 1/2 tsp oyster sauce
- 1/4 teaspoon garlic powder
- 1/2 tsp sugar
- 1/4 tsp ginger optional
- salt pepper
- 1/2 tsp sesame oil

In a wok or a large pan, heat oil and butter. Fry the egg (scrambled) and take out of the pan.

Add chopped onions and frozen vegetables and stir-fry until vegetables are tender.

Add cooked quinoa, soy sauce, oyster sauce, garlic powder, sugar and ginger. Continue stirring for about 1-2 minutes. Season with salt and pepper, to taste.

Remove from heat and add sesame oil. Serve immediately.
