Ramen Stir-Fry – delicious skillet dinner ready in 5 minutes.
Sometimes it doesn’t hurt to use some shortcuts to get a delicious home cooked meal in 5 minutes. When you use Asian-flavor ramen noodle soup mix and add some vegetables, mushrooms and spices to it, you will end up with a delicious skillet dinner for the whole family. It will taste like Asian takeaway Ramen Stir-Fry and you are totally in control with ingredients you are using. Kids will love anything with noodles and you can sneak some healthy veggies in there.

Ingredients
- 2 Tbsp vegetable oil
- 1/4 tsp ginger minced
- 2 cups frozen vegetables or fresh
- 1 1/2 cup sliced mushrooms fresh
- 1 package ramen noodles + seasonings
- 1 Tbsp sesame oil
- soy sauce hot pepper sauce
Instructions

Put vegetable oil and ginger in a pan or a wok and fry for a few seconds.

Add frozen vegetables and sliced mushrooms and fry for about 3 minutes, or until they become softer, but still remain a bit crispy.

In the meantime, cook ramen noodles in a pot of water until done, about 3 minutes. Drain, toss with sesame oil and add to vegetables.

Season the mixture with seasoning packet, soy sauce and hot pepper sauce, to taste. Stir-fry for another minute and serve immediately.
