Ingredients
- 2 Tbsp butter or oil
- 2 Tbsp cashews
- 1/2 cup onion
- 1/4 tsp fresh ginger minced or to taste
- 1 tsp garlic minced
- 1 tsp turmeric powder
- 1/4 tsp chili powder or to taste
- a pinch of ground cardamom
- cloves a pinch of ground
- 1 cup peas
- 1 cup carrots
- 1 1/2 cup long grained rice, basmati
- 3 cups hot water
- salt
Instructions

In a large pan, heat butter or oil and fry cashews until golden.

Add onions and fry for 3 – 4 minutes or until translucent.

Add ginger, garlic, turmeric, chili, cardamom and cloves. Stir-fry for 30 seconds on a low heat.

Add vegetables, rice, hot water and salt. Cook on low heat, stirring from time to time, until rice is done.

Using oil to fry, this is a great dish for both daughters, 1 Vegan and 1 Vegetarian not forgetting daughter-in-law who is also vegetarian.
