Spicy Peas and Carrots Rice is easy to prepare one pan dish. Vegetables are mixed with rice and spices while cashews add a nice nutty flavor and additional proteins. It can be more or less spicy, to your linking.

- 2 Tbsp butter or oil
- 2 Tbsp cashews
- 1/2 cup onion
- 1/4 tsp fresh ginger minced or to taste
- 1 tsp garlic minced
- 1 tsp turmeric powder
- 1/4 tsp chili powder or to taste
- a pinch of ground cardamom
- cloves a pinch of ground
- 1 cup peas
- 1 cup carrots
- 1 1/2 cup long grained rice, basmati
- 3 cups hot water
In a large pan, heat butter or oil and fry cashews until golden.
Add onions and fry for 3 – 4 minutes or until translucent.
Add ginger, garlic, turmeric, chili, cardamom and cloves. Stir-fry for 30 seconds on a low heat.
Add vegetables, rice, hot water and salt. Cook on low heat, stirring from time to time, until rice is done.
