Tortilla Pizza – easy solution when you’re not in the mood for making pizza dough.
If you are in the mood for pizza, but don’t want to spend time making the dough, the easiest thing you can do is make Tortilla Pizza.
Take a tortilla, spread it with ketchup and other toppings of your choice and bake briefly in the oven. You will get your pizza ready in just a few minutes.
You can make it vegetarian (with some healthy veggies like corn, avocado, butternut squash, mushrooms etc), vegan (by replacing mozzarella with vegan cheese) or even meat lovers pizza (by adding some lean ham).
Use tortilla instead of pizza crust when you make homemade pizza. Each time use different toppings – possibilities are endless!

- 2 large tortillas (6 inch)
- 1/2 cup ketchup
- 1/2 tsp dry oregano
- 1/2 cup cooked corn
- 1/2 cup mozzarella cheese or vegan cheese
- 1 avocado cubed or sliced
- slices jalapeno (optional)

Preheat oven to 450 F (240 C).

Place tortillas on a baking sheet. Spread ketchup over tortillas. Sprinkle with oregano and scatter cooked corn and cheese over it.

Bake for a few minutes, until tortilla edges start browning and cheese has melted.

Take out of the oven. Sprinkle with avocado and jalapeno slices and serve immediately.
