Buffalo Chicken Meatballs are a good, low fat substitute for a famous Buffalo Chicken Wings which are tasty but very greasy, too. They can be fried, deep fried, grilled or baked and then tossed with a spicy hot sauce. For a healthy, low calorie meal I would suggest baking them.
You can make Buffalo style meatballs ahead of time and bake (or fry) when you need them, as they are best served hot.
They can be served as a party appetizer, side dish, skinny dinner or together with pasta as a complete meal. You can even make a sandwich with mini Buffalo Chicken Meatballs.
Of course, ground chicken can be substituted with any other type of ground meat as well.

- 1 lb ground chicken
- 1 medium onion
- 1 carrot
- 2 cloves garlic
- 1 egg
- 1/2 cup breadcrumbs
- 1 tsp paprika
- salt and black pepper to taste
- 1/2 cup hot sauce

Put onion, carrot and garlic into a food processor. Chop into small bits.

Transfer into another bowl and mix with ground meat, egg, breadcrumbs, paprika, salt and pepper and 1/4 cup hot sauce. Mix thoroughly. Shape into small balls.

You can either fry meatballs in a pan or place on a cookie sheet and bake in 400 F oven for about20-25 minutes or until cooked through. Toss meatballs with remaining 1/4 cup hot sauce.
