Celeriac Mash – creamy and fragrant side dish that can be served with any kind of meat or vegetarian burgers or patties.
Celery root, or celeriac, is very underrated vegetable. It is mainly used as a seasoning in many dishes, but rarely on its own. Italians always start making their sauces and ragus with “soffritto”: a combination of sauteed onion, carrot and celeriac. Similar is French mirepoix.
Celeriac Mash is a wonderful side dish, creamy and fragrant, that can be served with any kind of meat or vegetarian burgers or patties. It can be a good substitute for mashed potatoes or cauliflower to bring some variety to everyday cooking, as well as many health benefits.



- 1 large celery root diced celeriac
- 1 Tbsp butter
- 3/4 cup chicken broth or water
- 3/4 cup heavy cream
- a pinch of dry garlic
- a pinch of thyme
- salt and pepper to taste
- chopped chives for garnish

Saute celeriac in butter for 2-3 minutes. Add remaining ingredients, cover and cook for about 15-20 minutes, stirring from time to time. If liquid evaporates too quickly, add a few tablespoons of water.

Mash with a potato masher or blend using immersion or regular blender. If you like very thick puree, return to the pot and heat, stirring, for 1-2 minutes until desired consistency is achieved.
