Quinoa Cucumber Tomato Mozzarella Salad – great for family dinner, picnic, barbeque or a party.
Summer salads are very refreshing and filling, while adding nutrients and fiber to our diet. This Quinoa Cucumber Tomato Mozzarella Salad is great for family dinner, picnic, barbeque or a party. If you are serving it immediately, you just need to mix chopped vegetables with cooked quinoa and dressing. If making ahead for a party, salt cucumbers and let them stand to release liquid, which will otherwise make your salad watery.
Quinoa Cucumber Tomato Mozzarella Salad is delicious as a side dish to grilled meat or it can replace a light lunch or dinner.

- 1 cup cooked quinoa about 1/4 cup dry quinoa before cooking
- 1 cup fresh cucumber cubed
- 1/2 cup tomatoes cubed (or cherry tomatoes)
- 1/2 cup mozzarella balls halved
- DRESSING:
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1/2 tsp dry dill or 1/2 Tbsp fresh dill
- salt and black pepper to taste

Put olive oil, red wine vinegar, dill, salt and black pepper in a large serving salad bowl. Mix with a fork.

Add cooked and cooled quinoa, cubed cucumber, tomatoes and halved mozzarella balls. Toss to combine and serve immediately.
*If you want to make your salad ahead, put cubed cucumbers in a colander and toss with a large pinch of salt. Let the cucumbers sit for 20 minutes to release liquid, then gently pat dry with a paper towel.
