Roasted Chickpea Snack is wonderfully addictive. And healthy, too! Crispy, crunchy and nutty. They are great as a snack or served with drinks. With high protein levels, low GI index and low in fat, they are perfect for weight watchers, diabetics and pretty much everybody else. Sweet or savory, any flavor combination will do. I used two of them: olive oil/cajun seasoning/red pepper flakes combo and butter/garam masala flavor. I’m planing to try cinnamon/honey, brown butter/brown sugar and Moroccan spice mix. Chickpeas will need from 30 to 40 minutes to roast, depending on their size and moisture level. If you are looking for a healthy, filling snack, there is no need to look any more. Roasted Chickpea Snack is it!
- 2 cups cooked chickpeas or garbanzo beans
- 1-2 teaspoons oil (sunflower, olive, coconut…)
-
Rinse and drain chickpeas and place on on a tray lined with paper towel. Gently press with another paper towel to absorb the moisture. At this point you can remove the skins from the beans, but in my opinion it is not necessary because they will be nice and crispy when they bake. Just discard the loose ones so they do not burn.
-
Transfer the beans to a baking sheet. Make sure they are spread in a single layer. Drizzle the oil over the chickpeas and toss around to coat.
-
Roast in preheated 375 F (175 C) oven for 30-40 minutes until the beans are golden and crunchy. Stir the beans after 15-20 minutes of roasting. Sprinkle with salt and/or seasonings of your choice.
