This Vegan Side Dish recipe is great for any season. You can increase or decrease the amount of vegetables according to your taste, or add a new one which is fresh on the market.
Meat eaters will also love it, served together with baked or grilled meat. In that case, add vegetables to the baking pan with meat about 20 minutes before the meat is cooked. Cover with foil and cook together.

Ingredients
- 1 medium onion
- 4 cups sliced leek
- 3 Tbsp oil (sunflower, canola or olive oil)
- 2 medium carrots, sliced in rounds
- 3 potatoes
- 1/4 c tomato puree
- 3-4 cloves garlic
- a pinch of dry thyme
- salt pepper
Instructions

Saute onion and leek in oil. Add carrots and continue frying for about 5 minutes. Add a little bit of water if the mixture becomes too dry.

Add garlic and potatoes cut in thin round slices. Cook until soft.

Add tomato puree, thyme and season with salt and pepper. Continue cooking until sauce thickens a little bit.

Transfer to an oiled baking dish, cover with aluminum foil and bake in 350 F (175 C) oven for about 20 minutes.
