Cajun Potato Soup – all the flavors of Cajun Potato Salad turned into a creamy winter delight.
This week we have so-called “Polar Vortex” over Europe. It is unusually cold for this time of the year with temperatures like -19 C (-2 F), strong wind and lots of snow. Still, it is perfect weather for a homemade soup.
The other day I thought about Cajun Potato Salad I made this summer and how much I liked it. I thought I would like to have another type of meal with the same taste and it occurred to me to use similar ingredients and spices to make a soup.
The base of the soup are potatoes and corn. It is creamy because of milk an cream as well as pureed vegetables. The soup is thickened with a little bit of cornstarch. For flavor I used Cajun spice mix, smoked paprika, mustard and lemon juice. You can adjust the amount of each spice to your liking.
The soup can be totally smooth if you blend all of the ingredients in a blender, or you can leave a half or a third of the mixture chunky.
I thought of garnishing it with hard boiled egg slices and jalapeno, the same way I garnished the salad.
All in all, m pretty satisfied how my Cajun Potato Soup turned out. If you’re experiencing similar winter conditions to mine, you may want to give this soup a try.

- 2 tsp cornstarch
- 1 Tbsp butter
- 3 coked potatoes, small to medium
- 1 cup cooked corn kernels
- 1 1/2 cup vegetable broth
- 2 cups milk
- 1/2 cup cream
- 2 tsp mustard
- 1/4 tsp smoked paprika
- 1/3 tsp Cajun seasoning
- 2 tsp lemon juice or to taste
- salt black pepper, cayenne pepper, to taste
- GARNISH: hard boiled eggs, jalapenos or green bell peppers, paprika, chives

Mix cornstarch with 2 Tbsp water. Put in a pot with other ingredients. Bring to a boil and let it simmer until everything is heated through. Adjust seasonings to your liking.

Put part (or all) of the ingredients in a blender and blend until smooth. You can also use an immersion blender. Return back to the pot. Stir to combine.

Pour soup into serving bowls, garnish with hard boiled egg slices, chopped jalapenos, paprika and chives (optional).
