Mixed Bean Soup - colourful, healthy and heart-warming mixed bean soup
- 1 ounces package mixed dried beans 12
- 1 large onion chopped
- 1 cup chopped carrot
- 1 cup chopped celery
- 8 cups water
- 2 bouillon cubes
- 2 cloves garlic minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- salt to taste
Put the beans in a large pot with water enough to cover the beans by a good 3 inches. Let soak overnight. Drain beans.
In a large pot, heat the oil and saute the onions. Add the carrots and celery, saute another 2-3 minutes.
Add the remaining ingredients and bring to a boil. Simmer for 1 1-1/2 to 2 hours or until beans are tender. Season with salt.
