The other day I made this Vegetable Pasta Stew for my family. At first I did not plan to take photo of it and publish it on the internet, but then I thought – why not? It is simple enough, tastes great and it is healthy in every way,: low-fat, low-carbs, full of minerals, vitamins and fiber. I hope you’ll like it as much as we do.

Ingredients
- 800 g fava beans
- 1-2 Tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic
- 500 g string beans
- 2 large carrots, diced
- 1 cup kholrabi, diced
- 1 tsp tomato paste
- 100 g small whole wheat pasta
- fresh dill and parsley to taste
- salt, pepper
Instructions

Pour boiling water over fava beans. Let stand for about 1-2 minutes then drain and remove skins.

Saute onion in olive oil. Add garlic and remaining vegetables. Cover with water until vegetables are covered. Cook until tender.

Add tomato paste, pasta, parsley and dill and cook until pasta is al-dente. Season with salt and black pepper.
